Mmmmm....Eggs Benny



I am the ultimate creature of habit when it comes to breakfast food. I guess it started in late high school — eating breakfast with friends or family at The Rising Loafer in Danville (I think most of my friends would agree with its low Yelp rating, but for whatever reason I loved their eggs Benedict and homemade bread).



The obsession continued throughout college and I got to a point recently where I realized that it’s been literally 7 or 8 years since I’ve ordered anything other than “eggs benny” from a breakfast or brunch menu (as long as the restaurant has it — though I’ll rarely go to brunch at restaurants that don’t).


I decided it was finally time to learn how to make this beloved dish so that I can stop spending $14 on it every weekend. Cam and I followed this easy Hollandaise sauce recipe from Unruly Bliss, and were shocked to find out how easy it actually was! Side note: I’ve attempted Hollandaise only one other time in my life and my grandpa to this day jokes about how I nearly destroyed his kitchen, not to mention I used 7 lemons instead of 7 teaspoons of lemon juice….


The picture above is how it turned out…I realize it’s not beautiful but I chose to kind of douse my plate in Hollandaise, despite realizing how much effing butter goes into that stuff…
