Healthful, delicious meal idea: Lime and honey glazed salmon with warm corn and black bean salad


I'm certainly not known as the chef in my group of friends. Just a few months ago Olivia had to leave the room because my "dinner," which consisted of a very runny, undercooked egg and a rice cake, was too respulsive to look at. That being said, I will allow myself one humble brag: I (okay, with help from Rachael Ray) have mastered the most delicious salmon recipe...ever.

1. Ingredients: 4 tablespoons olive oil, 1 medium onion, 1 red bell pepper, 2 cloves of garlic, 1 teaspoon red pepper flakes, 1 teaspoon ground cumin, 3 tablespoons honey, 1 teaspoon chili powder, 4 6-oz. salmon filets, 1 15-oz. can of black beans, 2 tablespoons fresh cilantro, 6 cups baby spinach, 2 limes, 1/2 cup chicken stock or broth, 2 ears of corn (I used a bag of frozen corn because we had it, but fresh corn is obviously preferable.).
2. Chop onions and bell pepper, set aside for corn and black bean salad.
3. In a new plate, squeeze the juice from one lime to start glaze for salmon. Also add honey, chili powder, salt, and pepper. 


4. Rinse off salmon filets.

5. Coat salmon filets in lime/honey marinade; set aside.

6. Preheat stovetop to medium-high heat for salad, add 2 tablespoons olive oil
7. Turn grill on to medium-high heat (you can also turn the stove onto medium-high heat if you do not have a grill).
8. Throw onions, peppers, garlic, red pepper flakes, cumin, salt, and pepper into pan on stovetop. Stir occasionally for 3 minutes.

9. Place salmon filets on the grill or stovetop (about 3-4 minutes each side for stove top, or until cooked through and flaky).
10. Add corn to salad mixture, cook for 1 minute.
11. Add chicken stock to salad mixture, cook for additional 2 minutes.

12. Add black beans to salad mixture, stir them in until they are heated through.
13. Remove skillet from heat and put salad mix in a mixing bowl. Add juice of one lime, cilantro, and spinach. Stir mixture until spinach is wilted.

14. Divide salad onto four plates. Remove salmon filets from grill and place filet on bed of salad.
15. Garnish with cilantro and bon appetit!
